Pre-motherhood, my morning routine would look like this: a run lasting longer than 30 minutes, a hot and uninterrupted shower, and a post-workout smoothie enjoyed on the porch. These days, most mornings look like this: wake up, nurse the baby, change the baby, make lunch/coffee/smoothie for Ryan (part of which I put in the fridge for myself to enjoy at a later time), and toss the baby in the stroller in hopes of getting a run in before he’s ready to go back down for a nap. Having a smoothie for breakfast gives me a fresh start to the day and packs a nutritional punch that will sustain me until lunch. Well, maybe at least a couple of hours!
This smoothie is a favorite around here. Tart, refreshing, and loaded with folate, potassium, vitamin C, antioxidants, and fatty acids.
Beet Smoothie for Two
1 cup lemon juice, fresh or bottled
1 cup orange juice
1 fresh beet, tops removed and chopped
1 cup fresh or frozen mixed berries
1 tablespoon flax seeds
2 cups spinach
Place in a high speed blender in the order listed above. Blend on high until smoothie. Pour into a glass and enjoy!
