Overnight Oats {hot!}

Lately, our little guy has been waking up and immediately asking to eat breakfast. If I take the time to make a veggie scramble or stovetop oatmeal, he gets antsy and I end up giving him something to hold him over – banana, dried figs, raisins – which end up spoiling his breakfast that I’ve now taken too long to make. We’ve always loved overnight oats but in the Fall and Winter, when the mornings are cooler, I crave a comforting hot breakfast. This is how I came up with overnight oats (hot!) – something nutritious that was all ready to go in the morning and could simply be heated.

The oats soak up the almond milk and all of the flavors that have been added the night before. The result is a hearty, creamy, flavorful oatmeal. Oats contain soluble fiber, which is essential in keeping your digestive tract healthy and moving properly. To accompany the oats, this recipe calls for cinnamon, which stabilizes blood sugar; honey, which has antiviral, antifungal, and antibacterial properties; dried figs that are loaded with antioxidants and potassium; bananas, which are also loaded with potassium; and almond butter that packs protein and vitamin E.

We went camping a couple of months ago and this was the perfect breakfast to bring along – nothing to be prepared, only heated over the stove.

 

Overnight Oats {hot!}

Serves 4

1 ½ cup organic rolled oats (gluten free if desired)

2 cups almond milk

1 tablespoon chia seeds

1 tablespoon almond butter

1 teaspoon raw, local honey

1 teaspoon cinnamon

Place all ingredients into a large bowl and mix well. Pour into jars and refrigerate overnight. In the morning, spoon desired amount into a bowl and microwave until warm (about 30 seconds) or place in a pot on the stovetop to heat. Top with dried or fresh fruit, nut butter, and homemade almond milk. Enjoy!

  1. Hello -I tried to post but was unable again – BUT we are going to make this delicious sounding breakfast because it seems, even though we are retired, we are a little more hectic than normal!!! Thanks for your continuous choices!!!
